SUNDAY NIGHT MEAL PREP

Every Sunday I sit down and plan dinners for the week. I do this by combing through our pantry and freezer so that I have an idea of what we currently have on hand. I then jot down a few ideas and take to the interwebz or my clean cookbook for inspiration. I almost always have recipes in my mind that I want to try. Am I alone there? So many recipes, so little time! HA!
How do you meal plan for the week? This is a big week because I am starting a new round of the 21 Day Fix! I am so excited. You can see what the fix is and get a glimpse of my results from my first round on the 21 Day Fix tab here. I will be posting my meal plans, daily workouts and some inspiration as I go through this round. I am looking forward to a little extra accountability! What keeps you motivated if you're following a plan? Support from others, seeing results, prizes, incentive, a new outfit?? What keeps you going? OK, so here are my meals for tomorrow. I am keeping it simple:
Breakfast: Shakeology with teaspoon of peanut butter and spinach, ice, water, blended Snack 1: 2 hard-boiled eggs and pineapple Lunch: Turkey and hummus with cucummber and tomato on a whole wheat tortilla Snack 2: Sunflower seeds and an apple Dinner: Turkey meatballs with red sauce and whole wheat pasta and side of broccoli
