FRUITY LEMON GUMMIES (healthy) :)

A friend sent me a recipe that she had come across for "healthy" gummies. I was so excited because my daughter is always asking for fruit snacks. I hate that most are loaded with artifical colors and sweeteners- among other things. So, I couldn't wait to give these a try!

They really were simple and with a few tweaks, I was able to make a delicious treat that I feel good about giving my daughter!
Ingredients:
¾ cup lemon juice 1 cup frozen raspberries (or mixed berries) 3 tablespoons honey (okay, go for 4-5T!) ¼ cup gelatin Instructions: Place lemon juice and frozen fruit in a blender and blend on high until completely mixed. Pour into a saucepan. Then add the honey and gelatin and whisk together. You will have a thick paste. Turn the heat on low, and continue to whisk the mixture for 5-10 minutes, until it thins and everything is well mixed. Take off the heat. Pour into a small baking dish. Set in the refrigerator for at least 1 hour to firm up. Cut into bite-size squares (or fun shapes using a small cutter). If you have silicon molds, that would work, as well! **I thought the raspberry lemon "as-is" was a little tart for Harlow, so I added a tad more honey to this. Next time I will add strawberries in with the raspberries.** What other flavors can you imagine??
