BREAKFAST SALAD
Or as I like to call it...modified cobb salad :) No matter the name, it's delicious. AND 21 Day Fix friendly....where my fixers at??!
Breakfast Salad
Total Time: 15 min. Prep Time: 15 min. Cooking Time: None Yield: 2 servings
Ingredients: 2½ cups chopped kale ¼ medium red onion, chopped 1 medium tomato, chopped ¼ cup toasted sunflower seeds 2 slices cooked turkey bacon, chopped Sea salt (or Himalayan salt) and ground black pepper (to taste; optional) 2 Tbsp. all-natural vinaigrette salad dressing (your flavor choice) ½ ripe medium avocado, thinly sliced 2 soft-boiled large eggs, peeled, cut in half
Preparation: 1. Combine kale, onion, tomato, sunflower seeds, and turkey bacon in a large serving bowl; toss gently to blend. 2. Season with salt and pepper, if desired. 3. Drizzle with salad dressing; toss gently to blend. 4. Top salad with avocado and eggs
For those following the 21 Day Fix Eating Plan, this salad uses 1 green, ½ red, 1 blue, and ½ teaspoon.
