Easy (and cheap) Weeknight Chili

The weather has changed and I had a craving for chili! I have tasted my fair share of chili's out there an have some favorites. I wanted to create something that I had most (if not all) the ingredients for already and was light on the beans. This is for 2 reasons. 1. my husband prefers beanless chili (?) and 2. less carbs for me ;) So, I scoured the pantry and came up with this. I thought it was pretty darn good and my daughter seriously GOBBLED it up. Who knew and 17 month old would love chili so much!
Maybe the best part is that we used it the next night for chili turkey dogs and both have taken it for lunch. Talk about stretching the dollarz!
So....without further suspense:
Ingredient list:
1 lb lean ground beef1 onion, chopped
3 cloves garlic, minced
1 large can diced tomatoes 1 14.5 oz can tomato sauce 2 Tbsp chili powder 1 Tbsp garlic powder 1 can chili beans in mild sauce In a cast iron dutch oven add tsp of oil, saute onions until soft and add in garlic. Once fragrant, add in beef and cook until browned. Drain excess fat. Add in diced tomatoes, tomato sauce, chili powder and garlic powder. (S&P to taste) Stir well to combine. Let simmer for as long as you can, 1-2 hours. Add in chili beans with sauce for the last 20-30 minutes. Top with all of the usual goods. I knew I was making this for the fam, so spicy chili lovers will need to up the heat with a can of chili beans in hot sauce or add a few dashes of your favorite hot sauce! **Alternate method: After browning the meat, you could throw everything in a crock pot on low and let it simmer all day! ** Let me know how you like it!
